Simple Allergen Free Kid Friendly Recipe

As a mom with a child who is allergic to everything, I know the struggle of trying to find meals and snacks to give to your kids. I’ve read every label in the grocery store and have spent hours on Pinterest or Google looking for meals. I’ve learned to get creative in the kitchen. This is when trial and error is your best friend. I can’t tell you the number of times I've completely failed trying to make allergen free foods. It’s almost humorous the amount of disgusting dishes I have made. One time I tried to make gluten, dairy, egg, and soy free pancakes and let me tell you that it ended with me gagging and throwing everything away… needless to say my son didn't get pancakes for breakfast that morning. But I've slowly gotten better with my cooking and my confidence in the kitchen is increasing. I wanted to share some recipes that have been my saving grace. Recipe number one on my list is Toast and Jelly. This recipe might seem simple but do you know how hard it is to find gluten, dairy, egg, soy, and nut free bread!  





Ener-G light classic bread is tasty and allergen free. I found this bread at my local grocery store in the gluten free section. The ingredients listed on the bag are Filtered Water, Rice Flour, Tapioca Starch, High Oleic Safflower Oil, Pear Juice Concentrate, Bamboo Fiber, Organic Palm Fruit Oil, Yeast, Modified Cellulose, Guar Gum, Organic Tapioca Syrup, Salt, Orange Citrus Fiber, Baking Powder (glucono Delta Lactone, Calcium Carbonate & Magnesium Carbonate), Enriched With Thiamin (vitamin B1), Riboflavin (vitamin B2), Niacin, Iron, Folic Acid.


*This bread is produced in a facility that also produces products with eggs* so if your child has a sever egg allergy you might want to avoid this recipe. 



I recommend toasting the bread lightly before serving. I use a fruit based jelly on top and then pair a bowl of allergen free oatmeal for my one year old’s breakfast and he loves it! I cut the toast into strips so he can easily hold it and feed himself.
